Fluffy Chocolate Pancakes – Super Thick, Soft & Jiggly 🍫🥞

If you love pancakes that are extra thick, cloud-like, soft, and full of chocolate flavor, these Fluffy Chocolate Pancakes are a must-try. They’re inspired by Japanese-style soufflé pancakes, but with a rich cocoa twist.

The outside is lightly cooked and tender, while the inside stays airy, moist, and incredibly fluffy. The secret is whipped egg whites, gentle folding, and cooking slowly over low heat.

🍫 Fluffy Chocolate Pancake Recipe

Prep time: 10 minutes

Cook time: 10–12 minutes

Servings: 2–3 people

Ingredients

  • 2 large eggs, separated
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking powder
  • 2½ tablespoons sugar
  • Pinch of salt
  • ½ teaspoon lemon juice or cream of tartar
  • Butter or neutral oil for the pan

Optional toppings:

  • Melted chocolate
  • Maple syrup
  • Fresh strawberries
  • Banana slices
  • Powdered sugar
  • Whipped cream

👩‍🍳 How to Make Them

1. Separate the eggs

Separate the egg whites from the yolks carefully. Make sure no yolk gets into the whites, because this can prevent them from whipping properly.

Place the egg whites in the refrigerator while preparing the chocolate base.

2. Make the chocolate batter

Add the egg yolks, milk, and vanilla to a bowl and whisk until smooth.

Sift in the flour, cocoa powder, baking powder, and a small pinch of salt.

Whisk gently until you have a smooth chocolate batter without dry flour remaining.

Don’t overmix it.

3. Whip the egg whites

Take the cold egg whites and add the lemon juice or cream of tartar.

Beat with an electric mixer until foamy.

Gradually add the sugar while continuing to beat.

Keep whipping until you reach stiff, glossy peaks. When you lift the whisk, the peak should hold its shape rather than immediately collapsing.

This meringue is what gives the pancakes their dramatic fluffy texture.

4. Fold the Meringue Into the Chocolate Batter

Add about one-third of the whipped egg whites to the chocolate mixture and gently stir to loosen it.

Then add the remaining meringue in two batches.

Use a spatula to fold from the bottom upward, rotating the bowl as you work.

Be gentle.

You want to preserve as many air bubbles as possible. The finished batter should look very airy, mousse-like, thick, and fluffy rather than runny.

5. Shape the Extra-Thick Pancakes

Heat a non-stick pan over very low heat and lightly grease it.

Spoon a generous mound of chocolate batter onto the pan.

For the tall shape shown in the photo, continue adding batter on top of the center rather than spreading it outward.

You can also use a lightly greased round cooking ring for a cleaner, more cylindrical shape.

Add about 1–2 teaspoons of water to an empty area of the pan, then immediately cover with a lid. The steam helps the center cook while keeping the pancake tender.

6. Cook Low and Slow

Cook covered over very low heat for approximately 5–6 minutes.

The pancake should gradually rise and become noticeably taller.

Carefully check underneath. Once the bottom has set and developed a light cooked crust, gently flip the pancake.

Cover again and cook for another 4–5 minutes, or until the center is cooked through.

Avoid high heat. The outside can burn long before the center of such a thick pancake is finished.

✨ Getting That Crazy Fluffy Texture

The most important rule is don’t destroy the meringue.

Fold slowly and stop as soon as the batter is combined. If you aggressively whisk the chocolate batter and egg whites together, you’ll knock out the air responsible for the rise.

Temperature matters too. These pancakes need gentle, low heat and a covered pan.

And don’t press them with your spatula while cooking!

You want those tiny air pockets to stay intact.

🍫 Chocolate Lava Version

For an even more indulgent version, place a small piece of dark chocolate in the center of the first mound of batter, then cover it completely with another spoonful of batter.

As the pancake cooks, the chocolate melts inside.

Cut it open while warm and you’ll get a soft, fluffy chocolate interior with a melted chocolate center.

🍓 How to Serve

Serve immediately while the pancakes are still warm and at their fluffiest.

Stack them with strawberries and bananas for breakfast, or turn them into dessert with warm chocolate sauce, whipped cream, and a light dusting of cocoa powder.

For the viral-style finish, drizzle melted chocolate slowly over the top and cut straight through the center to reveal the soft, airy chocolate crumb. 🤤

Storage

These pancakes are best eaten immediately because their soufflé-like structure naturally becomes less airy as they cool.

If you have leftovers, refrigerate them in an airtight container for up to 2 days and reheat gently in a covered pan or microwave.
