How to Make Peach Mousse Cake
1. Make the Biscuit Crust
Crush the biscuits into fine crumbs.
Mix them with the melted butter until the texture resembles wet sand.
Place a cake ring on a flat serving board and press the biscuit mixture firmly into the bottom.
Use the back of a spoon or glass to create an even layer.
Refrigerate for about 20 minutes.
2. Prepare the Peach Filling
Add peach purée, sugar, and lemon juice to a small saucepan.
Mix the cornstarch with 1 tablespoon of water, then stir it into the peach mixture.
Cook over medium-low heat for about 2–3 minutes, stirring constantly, until slightly thick and glossy.
Allow it to cool completely.
Spread the peach filling over the chilled biscuit crust.
Return the cake to the refrigerator.
3. Make the Creamy Mousse
Sprinkle the gelatin over 3 tablespoons of cold water and let it sit for about 5 minutes.

6. Remove the Cake Ring
Run a warm thin knife around the inside edge of the cake ring.
Carefully lift the metal ring straight upward.
