Easy Apple Mixed Nut Cake – Soft, Nutty & Naturally Sweet 🍎🥜

If you have one apple, a few eggs, and a handful of nuts at home, try this incredibly simple apple cake. It’s soft and moist on the inside, slightly crunchy on top, and loaded with the flavors of apple, cinnamon, pistachios, almonds, and walnuts.

The best part? Most of the preparation happens right in the blender!

🍎 Ingredients

For the cake:

  • 1 medium sweet apple
  • 2 large eggs
  • 3 tablespoons rolled oats
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons walnuts
  • 2 tablespoons almonds
  • 2 tablespoons pistachios
  • 1/2 teaspoon baking powder, optional for a slightly fluffier texture
  • 1 teaspoon honey or maple syrup, optional if you prefer it sweeter

For the topping:

  • 1 tablespoon chopped pistachios
  • 1 tablespoon sliced almonds
  • 1 tablespoon chopped walnuts
  • A few thin apple slices
  • A small pinch of cinnamon

🥣 Step 1: Prepare the Apple

Wash the apple thoroughly. You can leave the skin on for extra texture or peel it if you prefer a smoother cake.

Remove the core and seeds, then cut the apple into small chunks.

Place the chopped apple and 2 eggs into a blender.

Add the rolled oats, cinnamon, walnuts, almonds, and pistachios.

For a sweeter cake, add a teaspoon of honey or maple syrup.

If you want the cake to rise a little more, add 1/2 teaspoon of baking powder.

Blend everything until you have a thick, creamy batter.
