Ingredients – 3–4 servings
- 600g white fish fillets, such as cod, haddock, tilapia, or halibut
- 3 tbsp butter
- 4–5 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- ½ tsp paprika
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, finely chopped
- Lemon wedges for serving
Instructions
1. Season the fish
Pat the fish completely dry. Season both sides with salt, black pepper, paprika, and Italian seasoning.
2. Sear until golden
Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add the fish and cook for about 3–4 minutes per side, depending on thickness, until beautifully golden and the center is cooked through. Remove temporarily from the pan.
3. Make the garlic butter sauce
Lower the heat. Add the remaining 2 tablespoons butter and minced garlic. Cook for about 30 seconds until fragrant, then stir in the lemon juice and parsley.
4. Coat the fish
Return the fish to the skillet. Spoon the hot garlic butter sauce repeatedly over each piece for another 30–60 seconds.
Serve immediately with extra lemon wedges and spoon plenty of that garlic butter sauce over the top. 🤤
Tip: Don’t overcook the fish—the key to this dish is a deeply golden exterior with a tender, juicy, flaky center.
