  • 1 cup cooked chickpeas, drained and rinsed well

  • Pinch of salt
  • ⅓ cup dark chocolate chips

How to Make Chickpea Chocolate Chip Cookies

1. Prepare the chickpeas

Drain and rinse the chickpeas thoroughly, then pat them dry with a paper towel. Removing excess moisture helps keep the cookie dough thick instead of watery.

2. Blend the cookie dough

Add the chickpeas, peanut butter, honey, vanilla, baking powder, and salt to a food processor or strong blender.

Blend until completely smooth and creamy.

Stop occasionally to scrape down the sides. The finished mixture should resemble thick peanut butter cookie dough, not a smoothie.

If it’s too wet, add a little more peanut butter. If your blender struggles because the mixture is too thick, scrape down the sides rather than adding lots of liquid.

3. Add the chocolate chips 🍫

Transfer the dough to a bowl and fold in the dark chocolate chips with a spatula.

4. Shape the cookies

Preheat your oven to 350°F / 175°C.

Line a baking tray with parchment paper.

5. Bake
