🍎 Gooey Apple Yogurt Oat Cake

If you love apple pie but want something simple, soft, and made with wholesome ingredients, this Apple Yogurt Oat Cake is worth trying. The outside bakes up beautifully golden while the center stays moist with tender apple pieces and a warm, gooey apple filling.

Ingredients

For the oat cake:

  • 1 cup rolled oats
  • 1 large apple, peeled and chopped
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • A small handful of chopped walnuts
  • Pinch of salt

For the gooey apple center:

  • 1 large apple, peeled and diced into small chunks
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1 tablespoon water
  • 1 teaspoon cornstarch mixed with 1 teaspoon water

How to Make It

Preheat your oven to 350°F (175°C) and line a small round cake pan with parchment paper.

Start by adding the rolled oats to a blender. Blend until they become a fine oat flour.

Add the chopped apple, eggs, Greek yogurt, honey, baking powder, cinnamon, and a pinch of salt. Blend again until you have a smooth, creamy batter. Stir in some chopped walnuts for extra crunch.

For that gooey apple-pie-style center, place the diced apple, honey, cinnamon, and water in a small saucepan. Cook over medium-low heat for about 4–5 minutes until the apples begin to soften.

Add the cornstarch mixture and stir briefly until the liquid becomes thick, glossy, and syrupy. You want the apple chunks to remain visible rather than turning into applesauce.

Pour about half of the cake batter into your prepared pan. Spoon the warm apple filling over the center, keeping a little space around the edges. Cover with the remaining batter and sprinkle a few walnuts on top.

Bake for approximately 30–35 minutes at 350°F (175°C), or until the top is golden and the cake portion is set.

Allow it to cool for several minutes before slicing.

When you cut into it, you should get that irresistible contrast: soft oat cake on the outside and chunky, juicy, golden apple filling in the middle. 🍎✨
