Don’t Throw Away Almond Pulp! Make Homemade Almond Milk & Delicious Chocolate-Dipped Cookies 🥛🍪

🥛 Part 1: Homemade Almond Milk

Ingredients

  • 1 cup raw almonds
  • 3 cups fresh water
  • 3 soft, pitted dates
  • ½ teaspoon vanilla extract (optional)
  • A small pinch of salt (optional)

Instructions

Step 1: Prepare the Almonds

For smoother blending, soak the almonds in water overnight, then drain and rinse.

Place the almonds into a blender.

Step 2: Add Water and Dates

Pour in 3 cups of fresh water and add 3 pitted dates.

The dates provide natural sweetness without needing refined sugar.

Step 3: Blend Until Creamy

Secure the blender lid and blend on high speed for 1–2 minutes, until the mixture looks creamy and milky.

Step 4: Strain the Milk

Place a nut-milk bag or fine strainer lined with cheesecloth over a large bowl.

Pour the blended mixture through it and gently squeeze to extract the almond milk.

Important: Don’t throw away the leftover almond pulp! We’re turning it into delicious cookies.

Transfer the fresh almond milk into a clean bottle and refrigerate. Enjoy within 3–4 days, keeping it chilled and discarding it sooner if it develops an unusual smell or taste.

🍪 Part 2: Healthy Almond Pulp Cookies

Ingredients

  • Leftover almond pulp from the milk recipe (approximately ¾–1 cup, well squeezed)
  • 1 ripe banana
  • 1 large egg
  • ½ teaspoon vanilla extract (optional)
  • ½ teaspoon cinnamon (optional)
  • 50–75 g dark chocolate, melted

For a no-added-sugar version, choose unsweetened chocolate. Dates and banana still provide naturally occurring sugars.
