Simple Ways to Regrow Popular Kitchen Vegetables

Ready to start your own home harvest? Here are some of the easiest vegetables to regrow from scraps:

1. Lettuce & Celery

One of the simplest and most rewarding plants to regrow! You can get multiple harvests from a single base.

What you need:

  • The base of a head of romaine lettuce, cabbage, or celery (about 1-2 inches tall).
  • A shallow bowl or plate.
  • Water.

How to do it:

  1. Place the lettuce or celery base cut-side up in a shallow bowl.
  2. Add about an inch of water to the bowl, just enough to cover the bottom of the base.
  3. Place the bowl in a sunny spot, like a windowsill.
  4. Change the water every day or two to prevent mold.
  5. Within a few days, you’ll see new leaves sprouting from the center. Once roots develop and new growth is substantial (1-2 weeks), you can plant it in soil for larger yields, or continue to grow it in water for smaller harvests.

2. Green Onions & Leeks

These are incredibly easy and fast-growing, providing a continuous supply of fresh greens.

What you need:

  • The white root ends of green onions or leeks (about 1 inch of the white part with roots attached).
  • A small glass or jar.
  • Water.

How to do it:

  1. Place the root ends in a small glass.
  2. Add just enough water to cover the roots.
  3. Put the glass on a sunny windowsill.
  4. Change the water daily.
  5. New green shoots will emerge rapidly, often within a day or two! You can snip off what you need and they will continue to grow back. For thicker stalks and longer-term growth, transfer to soil after 1-2 weeks.

3. Garlic

While you won’t regrow a full bulb quickly, you can easily grow garlic greens, which have a milder, sweeter flavor than chives and are fantastic in salads or stir-fries.

What you need:

  • A garlic clove (preferably one that’s starting to sprout a green tip).
  • A shallow container or pot with soil.

How to do it:

  1. Plant the garlic clove pointy-end up in a pot of soil, just deep enough so the tip is barely covered.
  2. Water lightly.
  3. Place in a sunny spot.
  4. In a few days, you’ll see green shoots emerge. Snip the greens as needed, and they will regrow.
