Blueberry Lemon Cheesecake Chia Pudding

Lemon makes the pudding taste brighter, while cottage cheese gives a creamy protein boost.

Ingredients

  • 2 tablespoons chia seeds
  • 1/2 cup milk
  • 1/4 cup blended cottage cheese
  • 2 tablespoons Greek yogurt
  • 1/4 cup blueberries
  • 1 teaspoon lemon zest
  • vanilla

Instructions

  • Whisk milk, cottage cheese, Greek yogurt, lemon zest, and vanilla.
  • Stir in chia seeds.
  • Chill and top with blueberries.
