Egg White Spinach Feta Toast
It is light but protein-focused, with spinach and feta adding flavor without needing a heavy sauce.
- 1 slice whole grain toast
- 3 egg whites
- 1/2 cup spinach
- 1 tablespoon crumbled feta
- black pepper
- 1 teaspoon olive oil
Warm olive oil in a small pan.
Add spinach and cook for 1 minute.
Add egg whites and scramble until set.
Spoon over toast and top with feta.
