Hummus Crunch Toast
Hummus and chickpeas add plant-based protein and fiber, while cucumber keeps it fresh.
- 1 slice rye or whole grain toast
- 3 tablespoons hummus
- 1/4 cup cucumber slices
- 2 tablespoons roasted chickpeas
- paprika
- lemon juice
- parsley
Spread hummus over toast.
Add cucumber slices and roasted chickpeas.
Finish with paprika, lemon juice, and parsley.
