Hummus Crunch Toast

Hummus and chickpeas add plant-based protein and fiber, while cucumber keeps it fresh.

Ingredients

  • 1 slice rye or whole grain toast
  • 3 tablespoons hummus
  • 1/4 cup cucumber slices
  • 2 tablespoons roasted chickpeas
  • paprika
  • lemon juice
  • parsley

Instructions

  • Spread hummus over toast.
  • Add cucumber slices and roasted chickpeas.
  • Finish with paprika, lemon juice, and parsley.
