Matcha Almond Chia Pudding

Matcha gives a bright flavor, and soy milk can add more protein than many other plant milks.

Ingredients

  • 2 tablespoons chia seeds
  • 1/2 cup unsweetened soy milk
  • 1/3 cup Greek yogurt or soy yogurt
  • 1 teaspoon matcha
  • 1/2 teaspoon maple syrup
  • 1 tablespoon sliced almonds

Instructions

  • Whisk soy milk, yogurt, matcha, and maple syrup until smooth.
  • Stir in chia seeds.
  • Chill and top with sliced almonds.

Notes

Chill time: 2 hours or overnight.
